Ellie: if Prilosec relieves your symptoms, then there's no reason why you cannot eat the foods you couldn't eat before. The goal of either medication or surgery is to allow you to eat normally without the discomfort of heartburn.
If you've had reflux for a long time and/or your symptoms return and are severe when you're not taking the Prilosec, I would suggest you consider undergoing endoscopy (a look down into your esophagus and stomach). This would determine whether your esophagus has been, or is being, irritated by the gastric contents washing back into the esophagus. In some folks, damage can still occur, even though the discomfort is minimal.
