Hi M,
Of course you have to start slowly and then be sure that you are not allergic to certain of these seeds.
If you are gluten intolerant, some seeds will have to be avoided. If wheat is an allergen, other seeds will cause trouble. The seller should have a list posted for your info. (You buy them out of a barrel and fill your own bags with a scoop.)
First you will need a rice steamer with a 75 minute timer, a few pounds of each of the grains, spices, (cinammon, ginger, paprika, oregano, onion powder, garlic powder etc, boullion cubes, fresh or dried fruit chunks, you get the idea.
You will have to cook the seeds for about an hour until tender, then put 4 oz servings in ziploc bags for later use. When you need to add carbs to your meal, instead of a couple of slices of bread or a cup or two of pasta simply microwave the ziploc bag for 30 seconds or so and pour it on your plate beside that pork chop or piece of steak. You can still have other vegetables and a baked potato with the meal, but avoid root vegetables on their own.
If you start with a half cup at first, then work up to one cup of grains with two of your meals each day, you will remain full between meals, reduce high blood sugar rises, consume fewer calories, reduce constipation and diarrhea, loose weight without consciously trying because you will be less likely to snack and your sugar cravings will start to diminish. You can even take the grains to work in a microwavable thermos cup along with a meat and vegetable stew. (Not in the same container of course)
If you are type 2 diabetic, your doctor will be impressed that your insulin requirments will be reduced.
I hope this answers your question. If not, check out a cookbook called "The Wholegrains Cookbook" by Diana Mirkin at the big bookstores.
Good luck
